Mom's Monster Cookie Recipe

This recipe will feed a crowd. Perfect for a house full of teens, potlucks, or as my mom would do, send along with me to cross country meets for all the hungry teenage runners. It's almost guaranteed these will appear at a family campout because they make a large batch, have all the good stuff everyone loves, and you can make ahead and freeze until you're ready to go. I still love them and have to be careful that I don't eat too many at one time. 



These can be made gluten free by making sure your oatmeal and other ingredients are certified. But no modifications need to be made otherwise.


I hope you enjoy making and eating these as much as my family does. Peanut butter and chocolate will always have a place in my heart and the oatmeal makes these a filling cookie...plus we could technically call them a breakfast cookie right? Ok, maybe not but in my house I think I'd let it slide :)

 

Monster Cookies

makes a monster amount, seriously


Ingredients

6 large eggs

2 1/4 cups packed brown sugar

2 cups granulated white sugar

1 cup butter or margarine

3 cups peanut butter

1 tablespoon vanilla

1 tablespoon dark Karo syrup

4 teaspoons baking soda

9 cups quick cook oatmeal

1 pound milk chocolate M&M's


Instructions

Preheat oven to 350°F

In a very large bowl, mix butter and sugars together with a hand mixer or get in your arm workout and do it by hand. Add the eggs, then the peanut butter, vanilla, and Karo syrup and mix well. You could also do this step with a stand mixer and then transfer it to the large bowl. Add the dry ingredients and stir stir stir with a sturdy wooden spoon.


Scoop out onto cookie sheets using a 1/4 cup measuring cup or ice cream scooper. You'll be able to fit about 6 cookies per sheet. Flatten them slightly and then bake until lightly brown. Cool slightly before removing from sheet and allow to completely cool on a wire rack.


Alternative baking method: press the dough into rimmed baking sheets and bake them as bar cookies. I did this once when I got tired of scooping individual cookies. I can't remember how long they had to bake for so you're on your own. Let me know in the comments!
