When two very special people decided to tie the knot, I knew my gift to them would be a cake to celebrate the occasion. I've heard a party without cake is just a meeting and nobody wants a wedding meeting.
I like to think that my clients can come to me with a vision, an idea, and can trust me to find the right designs and flavors to work from. I also use every cake as an opportunity to learn and try new techniques. What resulted in this case was a simple, yet elegant cake top for the bride and groom to take home and enjoy after the excitement of the day was over.
Seasonal, Blue, and No Fuss
That was the request I had as my starting point. I found several ideas on Pinterest and went with this one because I've been wanting to try the palette knife technique for some time and the berries on top were simple enough to not compete with the buttercream work.
The cake is a 6" vanilla cake in three layers with vanilla buttercream. I used an offset spatula and dark blue buttercream to create the details on the side of the cake. Having a turntable was a big help and time saver. Just dip into blue frosting and starting at the bottom, smear it up and over at the same time. Turn the cake and repeat. The only thing missing that I would incorporate the next time is some gold leaf detail work.
