Prepare yourself for the most delicious cookie you've probably ever eaten with a cup of coffee. Dutch speculaas has to be my all time favorite fall flavor. Move over pumpkin spice, speculaas has arrived in Sammamish.
I'm not going to give away my secret speculaas blend or cookie recipe because I spent months developing both until it was just how I wanted it. I had a house full of eager taste testers and they certainly came through for me.
Sometimes You Have to Fail to Succeed
After failing for the 10th time, I got smart.
I went back to basics and started to research what ingredients would give me the texture I was after. It was fascinating to learn how different ingredients, bake times, temperatures, and preparation can affect your final product. It sounds obvious and I knew a lot of it already but in the end it came down to good old online detective work and then a lot more trial and error. At least I was closer and it only took two or three more recipe modifications until the holy words "omg, these are perfect" were muttered.
One Recipe, Endless Designs
With a dough that works best rolled out and cut into shapes, the possibilities are endless for shapes. I even made luminaries and gingerbread houses out of it! I have to tell you, the smell of a candle burning inside one of these luminaries will make you want to eat the house right off the table. They were the perfect touch to my winter mantle decorations and made wonderful hostess gifts when we visited friends and family over the holidays.
